Didier and Nathalie, who used to work for the creative 3-star chef Pierre Gagnaire, opened their own pastry shop in Marais district in 2004 and it soon became a good address for Parisians. Their cakes are very original, intelligently using herbs like jasmine, rosemary or coriander, and look very beautiful. As a result of their restaurant dessert experience, they try to give some freshness to their pastry. “When you make desserts in a restaurant, your customers eat it as soon as it’s made. However, a pastry shop must consider the fact that customers take them away and carry them for a while and still, they must remain good.” says Didier. So many ideas and thoughts within a small 4-euro cake!(2007-01-26)
